Freezing Soft Cheeses

Does anyone know if you can freeze brie and camembert cheese....and for how long? If yes (and you've done it) does it change the taste or texture of the cheese? TIA

Freezing

The delicate texture of soft cheeses with bloomy rinds may be altered by freezing, but the taste will remain intact. You might want to use leftover pieces of Brie or Camembert in a soup or a salad! If, however, you freeze them for a short period, make sure they are carefully wrapped in aluminium foil and place them in an airtight freezer bag. As with all types of cheeses, it is important to cool them before freezing, and to allow them to thaw slowly in the refrigerator, letting the cheese to regain the humidity lost while frozen.

Neither the taste nor the texture of meals cooked with previously frozen cheeses will be affected.

Nancy, thanks for replying and for the link. I often buy my cheese from Costco as it's much cheaper there than in the local store, but I noticed that the site you posted mentioned the cheese having a mild ammonia-like smell being over-ripe. I've noticed this at times; although it still tastes good.....and it's always dated so I know it hasn't expired. I guess this means it's over-ripe according to the article. :confused:

Ha ha. No it doesn't normally last very long even though I'm the only one here that likes it. I had company coming so bought quite a bit while I was near a Costco. We never got around to eating much of it, so now I have three rounds of Camembert and a large round of brie. I love it, but probably not a good idea to eat all that before the expiry dates (which aren't that lengthy).....thus why I was wondering how it would do in the freezer.

One other question......How long can one freeze it for? A month? The article didn't say.....just if you want to freeze it for a short period of time. Thanks guys! :)

As I mentioned previously I often buy cheese at Costco because it's so much cheaper, but I have noticed that the camembert usually has a mild ammonia-like odor. According to the site that Seamus Lab posted a link to, this means the cheese is over-ripe. Is a mild ammonia-like smell normal? There is lots of time left before the cheese expiry date on the package and it always seems to have that smell when I buy it. Has anyone else ever noticed this and is it okay? It's not that strong.

For those who freeze brie and camembert....How long can you freeze it for?
