Nancy, thanks for replying and for the link. I often buy my cheese from Costco as it's much cheaper there than in the local store, but I noticed that the site you posted mentioned the cheese having a mild ammonia-like smell being over-ripe. I've noticed this at times; although it still tastes good.....and it's always dated so I know it hasn't expired. I guess this means it's over-ripe according to the article.
Ha ha. No it doesn't normally last very long even though I'm the only one here that likes it. I had company coming so bought quite a bit while I was near a Costco. We never got around to eating much of it, so now I have three rounds of Camembert and a large round of brie. I love it, but probably not a good idea to eat all that before the expiry dates (which aren't that lengthy).....thus why I was wondering how it would do in the freezer.
One other question......How
long can one freeze it for? A month? The article didn't say.....just if you want to freeze it for a short period of time. Thanks guys!
