Lamb chops on the grill, corn on the cob (I can't wait for the real good stuff I have to have it) mashed taters, mixed spring greens salad.
If I get to it we will also have homemade ice cream, I have some strawberrys that have to get used.

The husband is on a business trip so there's a good chance it will be that chocolate peanut butter ice cream from Cold Stone Creamery. Or nachos. Or nachos followed by the ice cream.

I'm pretty sure it won't be pretty.

I am not sure yet. I was just sitting here thinking I needed to make up my mind and take something out of the freezer. I'm thinking possibly chicken fajitas.

chicken, garlic, green onions, regular onions, shiitake mushrooms
(fishcake if desired)
sauce is: chicken stock, soy sauce, sugar, mirin

then top w/egg

and serve over white rice. yum!!!!
I wonder if I could substitue chicken stock for veggie stock and leave out the chicken.....

I'm sure you could.

If you eat tofu, that would work...any other veges, for that matter (bamboo shoots work well)
it's the sauce that makes it taste so good.
I loves my tofu!

I'm going to have to try it sometime soon now!!
