What's for dinner?

I just put ours in the oven....very simple dinner tonight. :)

We're having baked chicken glazed with muscadine pepper sauce, steamed broccoli, carrots and cauliflower, and herb roasted baby potatoes.

You call that simple? LOL We're having real simple- curly fries and chicken patty sandwiches. We're still trying to get rid of thebread, rolls, lettuce, tomatoes, cold cuts left overs from New Years.

:) It really is. Just season the chicken breasts with a bit of salt & pepper and the sauce is just a small jar of muscadine pepper jelly, 1 cup red wine, 1/2 cup chopped green onions, a clove of mince garlic, and 2 Tbsp butter cooked in a saucepan until the jelly melts - put it over the chicken, cover, and bake.

The broccoli, cauliflower, and carrots are in a bag so they just need steamed.

The potatoes - just cut them up and sprinkle pepper, herbs, and a bit of olive oil on them.

It'll have taken less than 15 minutes of prep time (and 30-45 mins in the oven) by the time everything is done.


I love chicken patties - we almost never have them (the boys don't really like them), but Jason used to make them with spaghetti sauce and shredded mozzerella cheese over them (I think that was all). They were so good.

I bought a piece of cake earlier. Not sure what, if anything, I'll have with it.
BBQ'ing steak on the oak pit - why??? because it's 68 degrees still on the central coast of CALIFORNIA. I will also wrap potatoes in foil and throw them on there too. It was 75 today and absolutely gorgeous.

Supposed to cool down next week to mid 30's at night. BRRRRRR....
