Spices vary with maker, but most often fennel seed, some red and black pepper, garlic and a bit of oregona (sp)

Sounds yummy! I mkae my own sausage and will substitute it for burger anytime!

Looks good.
I'm a big fan of Italian chicken sausage. I use it when I make batches of spaghetti sauce and as a topping for home-made pizza (tonight's dinner).
