How long and at what temp should I cook 3 bone-in skin-on chicken breasts in the oven? We usually grill these, but I don't feel like it today. Usually when I cook chicken in the oven, its come frozen in a box with explicit instructions! ;)

350 for 40-45 minutes.
That's how I do them on the grill and they come out perfect. Use the same temp and time you would on the grill.

Thanks.

I should have specified, DH usually grills them... me, not so much.

You need to invest in a meat thermometer. I would probably cook at 375 for 30 min and then test the temp....I prefer an internal temp of 165 for chicken. You can always cook at 350 for the first 30 min and then finish it off at a slightly higher temp for a crispy skin on top.

We DO need to get a meat thermometer Allie. We had one that broke, and I haven't replaced it. I ended up drying out the chicken a little yesterday.

So, anyone have any ideas for how to use up 2 cups of leftover brown rice and a single chicken breast to make dinner for two??
