I'll second the cork. I'm not a fan of stone or tile in kitchens because it's hard on the feet if you spend a lot of time working there. Cork is super-durable and resilient. Easier on the feet. If I were going to go with stone or tile, I'd likely choose a porcelain tile with tight joints and sandless grout. Even sealed grout will eventually get filthy, so I'm all for minimizing it. I choose prcelain because it's a solid colour all through the tile, so if it chips you aren't likely to notice it as much as you would with ceramic. Ceramic tile tends to be white with a coloured glaze. So if you chip it, it really shows.
