I have 2 chicken breasts in the fridge that I cooked 2 days ago. I'm going to pick the chicken off the bone, make baked ziti and mix the chicken in. It's SO GOOD and SO EASY!! Plus it makes a ton if you use the whole box of ziti - enough to freeze some!! Or have leftovers......

This is a favourite in my house

Hoisin Chicken

1/2 cup hoisin sauce
2 Tbsp rice vinegar
2 Tbsp soya sauce
1/2 tsp chinese 5 spice
3 Tbsp ketchup
about 4 cloves of garlic, minced

whisk together & marinate chicken (I typically use boneless skinless breasts) for a few hours in the fridge, then bake at 400 for about 50 minutes, or until cooked through. I have used this as a steak marinade/sauce as well, and marinated a pork loin roast & basted it with it, it' is very versatile... and yummy!

I make a "Hunter's Chicken" ("Cacciatore" means "hunter" in Italian).

Cook the chicken and cut in pieces.

Add to a prepared spaghetti sauce (I prefer Classico brand)

Add a small can of drained mushrooms or more or less as desired.

Season mixture with garlic, oregano, & basil to taste.

Add, stir in to cooked rice and heat for sufficent time to distribute flavors.

Serve with a salad.

(I often have both chicken and rice cooked ahead and frozen so I just defrost them and add the other ingredients. Or, when not, cook the rice in my Zojirushi rice cooker and then add the chicken, sauce, mushrooms, and spices to the cooker when the rice is near done.)

How about chicken marsala? Floured chicken pieces cooked in olive oil; drain the oil, add marsala cooking wine and chicken broth, simmer; then add sauted mushrooms. It's great over rice.
