I have the lemons, limes, shrimp, scallops, crab and tomatoes. So I think I will make ceviche and take to work Tuesday as I haven't fed the coworkers lately. I also have all the stuff for pineapple cheesecake squares.

Just wondering if anyone has a good recipe they make. I found numerous ones on line. One of the ladies on the computer conversion test team use to make a killer ceviche but she wouldn't share the recipe as it is the one her family uses is their restaurant.

So if anyone has one they want to share I would appreciate it very much.

Good ceviche is an oxymoron :p I'll take the pineapple cheesecake squares though.

No recipe to share, but I wish my coworkers were as nice as you, bringing in food!

properly made ceviche with good quality corn chips is wonderful. It is just most of the stuff is just yuk. I don't like it with calamari in in. And I don't like it slimy. Or left in the juice to long so the fish is rubbery and over cooked. I believe if the seafood is not of a quality you would eat as sushi it shouldn't be in ceviche.

that's why I want to try so hard to do it right.
