that don't involve mayonnaise? I'm having a birthday party for my mom on Saturday and we're having picnic food. Problem is half my family doesn't like mayo, so I need side/picnic salads without.

Pasta salad, involving either a good viniagrette or italian dressing??

There was a potato salad recipe that I clipped out of some magazine that didn't have mayo in it. If I remember, I'll bring it to work and post tomorrow.

Southwestern Potato Salad


1 (7-ounce) can chipotle chiles in adobo sauce
2 pounds small red potatoes
Cooking spray
1 1/2 cups fresh corn kernels (about 3 ears)
1/2 cup chopped celery
1/2 cup finely chopped red onion
1/2 cup chopped red bell pepper
1/4 cup chopped fresh cilantro
1 (15-ounce) can black beans, rinsed and drained
1 jalapeño pepper, seeded and finely chopped
1/4 cup fresh lime juice
3 tablespoons canola oil
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper


Remove 1 chipotle chile from can. Chop chile to measure 2 teaspoons. Reserve remaining chiles and adobo sauce for another use.

Place potatoes in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 10 minutes or until tender. Drain; cool. Cut potatoes into 1/4-inch cubes. Place potatoes in a large bowl.

Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add corn; sauté 5 minutes or until lightly browned. Add corn, celery, and next 5 ingredients (celery through jalapeño) to potatoes; toss gently.

Combine 2 teaspoons chopped chipotle chile, lime juice, oil, salt, and black pepper, stirring with a whisk. Drizzle the lime juice mixture over potato mixture, and toss gently. Cover and chill 1 to 24 hours.



Yield: 8 servings (serving size: about 1 cup)

Greens + fresh raspberries + blackberries + feta cheese crumbed + balsamic vinegar = yummy (and healthy too!)

Alternatively we do the pasta, Italian dressing, sliced olives, capers, Parmesan cheese, roasted red peppers salad for picnics.

I made this for John the first time we went on a picnic - he loved it:

One of my favourites is to reduce balsamic vinegar, emulsify that with a good olive oil, throw in chopped fresh herbs, salt and pepper, roasted garlic, and put that on a pasta salad.

It's making me drool thinking about it.

Broccoli salad

Cooked Raman noodles
Broccoli slaw (the shredded stems of broccoli)
Raisins
Feta cheese
Balsamic vinegar +Olive oil
Sunflower seeds (shelled)
Shredded carrots

There's the marinated tomatos (salad) recipe that I've posted in the Recipe Forum of this O&E.

Also, there are variety of hot German Potato Salad (usually w/bacon bits) that use vinegar but not mayo (Google for recipes). E.g., http://allrecipes.com/Recipe/German-Potato-Salad/Detail.aspx

Also, any leafy green salad (Cobb, spinach & bacon, etc.) can be made with an oil & vinegar dressing -- I greatly prefer using a good Balsamic vinegar.

Yesterday, I ate an "oriental chicken salad" at Applebee's -- shredded cabbage, some lettuce, bite pieces of chicken, with a sesame seed "oriental" dressing (similar to "Kraft's Light Asian Toasted Sesame").

Also consider cole slaw with an oil, vinegar, poppy seed dressing.

Here's two non-mayonnaise salads that I've used. Both are big hits.

Honey Lime Fruit Salad

Toss together equal quantities of:

mandarin oranges
strawberries
pineapple chunks
white grapes or kiwi (I use the grapes since most people don't like kiwi)

Combine the zest of one lime, the juice of two limes (approx. 4 Tbsp) & 2 Tbsp of Honey. Pour this over the combined fruit & toss together.

I'll post the recipe for the Tortellini Salad with Tomato Herb Vinegarette shortly, need to go get the recipe.

My husbands favorite is easy-peasy. Tri colored rotini pasta, fresh tomatoe hunks, italian dressing, salt & pepper. Can't get easier than that! :)

I make a really easy pasta salad.
Rotini pasta, shredded carrots, grated cheese, chopped green peppers, sunflower seeds and italian salad dressing. Wait until the last minute to put in the cheese, seeds and dressing.
