I had trouble figuring it all out at first too.

Scroll down on that page and you'll see the schedule. The Big Air Waves are the traditional dock diving like you've seen. So, according to the schedule, there will be Big Air Waves on:

Friday at 11:00, 2:00, 4:00, 6:00.
Saturday at 1:00 and 3:00
Sunday at 10:00, 12:00, 2:00

Extreme Vertical and Speed Retrieve are cool also. They are at:

EV demo - Saturday 10:30
EV competition - Saturday 5:00
Speed Retrieve - Saturday 6:00

Newbies can practice at the Open Dock times that are on the schedule. Also, they will have the dock open between the waves. Each event manager decides how much time is allotted to newbies, so I can't tell you exactly how much time you will have. But there will be people there to help you and show you how.

My pup will be too young (only 12 weeks) to do it, but we're only about an hour away from London (maybe less) so I might come out to watch. :)
