I thought it was 12 months-18 months that they grow until. She said she is consideered an adult now with all her adult teeth, she can go onto adult food and she will probably just finish growing by filling out!! she is only 7 months, 53 pounds and only 19 in tall!! Is this correct??
Yes it is. Structurally, height etc. is all done growing around 7-12 months. Full muscular development, filling out etc. will happen up through 18 months.
And many put their pups on adult food as early as 4 months, if they eat puppy food at all. So yes, you can change the food to a good adult version.
My Murphy grew in height through 2 years of age.

Baloo has put on almost ten pounds since right before his first b-day. I *think* he's also gotten a little taller.
I think it very much depends on the dog though. Baloo's breeder told me that Ross's kids (Baloo's dad) took a LONG time to mature, sometimes as much as 2-3 years. I didn't really think about it then, but now I know what she meant!
Baloo - 5 year old black lab
Peanut - 7 year old minpin
Monster - 3-ish year old frenchie/jack, rescue
Ellie Mae was every bit of 2 before she stopped filling out. I don't think she got any taller after 12 months or so.

Most of my dogs have reached their adult height by 7 or 8 months of age. They do continue to fill out until they are about two years old.
Gryphon, Lily and Rhumba all had a jump in height after 12 months of age. Lily and Rhumba's were both pretty significat being about an inch around 14 months of age.
Finn stopped growing up around a year old but just before he turned two he filled out and gained!!!! - he is now 98lbs stands top of head just below my hip and I have a 32"inseam. He has been on adult food all his life!
My girls have all grown another 1-1.5" and 10-12#(in good working condition) past 7 mos. All lines are different. The best info you can get is from your breeder. I've had general practice vets try to tell my puppy owners that their dog was going to be BIG when I knew that he was going to be on the small end.... sometimes I just have to shake my head.
