... do you prefer to use wire? or plastic (eg. VariKennel)? I'm looking primarily for ease of carrying/set up!

I prefer wire crates to carry in and out because they are so easy to fold and carry or roll, but if you have a grooming area that you will have for a long time I either is just as fine.
I guess for me, it would depend on what your set of wheels was like- size, how big the wheels are, maneuverability, etc.. With a hard crate, you can fill it up with your stuff and then wheel it in. When I flew with Monty, he stayed in the crate on my wheels, and I put my luggage on top of the crate. However, with a wire crate, you can just bring it in flat and put it up at your setup with almost as much ease as a soft crate. It would be easier to maneuver a folded wire crate than a lab-sized Vari-Kennel. Either of them will be heavy and bulky, as far as I'm concerned. Luckily, in CA, I haven't come across a show yet that didn't allow soft crates.
