I too have found the 'go low' method to be successful.

I kneel down at his level, slowly extend out the treat, and say "GENTLE". If he is gentle I praise him a bit and let him get his excitement out over getting a treta.

If he is not gentle I let out a pained noise and stop treating him. He usually feels bad that he 'hurt' me.
