I modified this from the Foodnetwork. Increased some ingrediants and added a little more spice. Also used croutons instead of making crostini. Here is the link to the original recipe http://www.foodnetwork.com/recipes/p...ipe/index.html
1 pound hamburger
8 oz sausage ( I used hot Italian)
1 large onion diced
1 green pepper diced (I have used fresh roasted Hatch chili's for work as we like it hot)
4 or 5 garlic cloves minced
1 teaspoon dried thyme
1 32 oz box of stock (chicken or beef)
2 regular size cans of petite diced tomatoes
1 15% ounce can of tomato sauce
3 teaspoons Italian seasoning
1 tablespoon brown sugar
2 cups broke up lasagna noodles
1 5 oz package of shredded Parmesan cheese
2 cups mozzarella cheese shredded
1 large bag of garlic croutons
In a large Dutch oven, combine meat, onion, bell pepper and garlic. Cook over medium-high heat for 8 to 10 minutes, stirring occasionally until beef is browned and crumbles. Drain well.
Stir in thyme, brown sugar, broth, diced tomatoes, tomato sauce, Italian seasoning, and salt. Bring to a boil over medium-high heat; reduce heat and simmer 20 minutes. Add noodles, and simmer until noodles are tender. Stir in Parmesan cheese
Put hot soup in bowls add croutons and top with mozzarella cheese...put under broiler if bowls are heat proof and you want it browned (like onion soup). We found that it melted fine when it comes in contact with the hot liquid while eating it at work as we had no broiler we just stirred the mozzarella cheese through.

I made this for dinner tonight minus the green pepper (no one in the house likes them). It was very good and perfect for the rainy, chilly evening! :-)
