Makes 4 burgers
1 15 oz can black beans rinsed and drained
1 egg
Panko breadcrumbs (about 1/4cup or more)add just enough to firm up the patties
4 scallions including some of the green choppped fine
1/2 small red pepper chopped fine
1 tablespoon or so chopped red onion
1 tablespoon roasted garlic (if using fresh use a clove or two chopped fine)
couple of squirts of srirachi (or any hot sauce)
a dash of Worcestershire sauce
salt and pepper to taste
recipe is really versitile... you could add roasted corn kernels, green pepper, chopped celery, etc.
mash beans to a coarse paste and add all other ingredients, mix well.
form 4 patties and put in refrigerator for 1 hour to firm up.
Lightly coat pan with oil and brown both sides of burgers. ( I used a cast iron grill pan with olive oil so the burgers had nice grill marks)
Add cheese if desired and serve with fresh tomato slices and thin slice of red onion.

You can call them black bear burgers if you want Amy. Actually I think I will call them that from now on.
I made them again last night with roasted corn from the farm stand.
Yes, you can freeze them.
