This is from Moosewood Restaurant Cooks At Home. I have yet to be truly disappointed by a recipe from that book, the directions are very clear, and the timing they give is usually pretty accurate. Before you spend your money, though, beware! It's a mostly vegetarian cookbook (only a few fish recipes).
Ingredients:
1.5 cps finely chopped onions
2 garlic cloves - minced or pressed
3 tablespoons vegetable oil
4 cps peeled, grated sweet potato (2 large, or 3 medium potatoes)
0.5 teaspoon dried oregano
1 teaspoon chili powder
2 teaspoons ground cumin
Generous pinch of cayenne pepper
Salt/pepper to taste
1 cp grated sharp cheddar cheese
8 tortillas, 8-10" (we use whole wheat, 'cause I'm crunchy granola like that)
Salsa/sour cream for the side
Directions:
Saute the onions/garlic in the veggie oil until the onions are translucent. Add the grated sweet potatoes, oregano, chili powder, cumin, and cayenne pepper. Cook, covered for apx 10 minutes, stirring frequently to prevent sticking. When the sweet potato is tender, add salt/pepper to taste and remove from heat. Spread 1/8 of the filling and 2 tablespoons of cheese on one half of each tortilla, leaving about a 1/2 border. Fold the plain half of the tortilla over the filling and cook in a lightly oiled, heavy skillet over medium heat for 2-3 minutes on each side.
