I looked at a few recipes and made up my own. It is a regular menu item here.
Oh, and it gets hotter if it is cooked longer.

The Meat:
1 4-lb piece of boneless pork loin or a 5-6 lb picnic roast
Ground red pepper (cayenne)
Garlic powder
1/3 cup white vinegar
Rinse meat and pat dry. Liberally sprinkle meat with red pepper and garlic powder (the more the hotter). Place meat in crock pot fat side up, stab pork with a fork or knife, then pour vinegar on meat.
Cook in crock pot 8-10 hours on low. Remove meat from crock pot, Drain liquid, and pull meat with two forks. Place meat back in crock pot.
The Sauce:
1 cup cider vinegar
1/4 cup water
1/2 tsp cayenne pepper
1/4 tsp black pepper
1/4 tsp crushed red pepper
handful brown sugar
Mix all ingredients in small saucepan. Heat to boiling. Add to pulled pork and heat on low 1 more hour.
Serve on buns topped with slaw.
The Slaw:
1 16-oz pkg shredded coleslaw mix
1 medium onion, quartered and thinly sliced
Dressing:
1 cup sugar
1 tsp salt
1 tsp dry mustard
1 tsp celery seed
1/4 tsp cayenne pepper
1 cup vinegar
1/3 c vegetable oil
Combine coleslaw mix with onion. Combine dressing ingredients in a saucepan and bring to a boil. Pour over cabbage mixture and toss. Refrigerate. A wonderful topping for pulled pork sandwiches.
Serve with baked beans and tater tots or french fries.

I do not eat pork but my hubby does, and this recipe has his name written all over it! As he has been living amongst people of the Muslim and Jewish faith for the past year, pork is NEVER on the menu at the UN camp where he is living. I think I will have to make him this the first week he is home! 6 weeks, 5 days to go!!!
