    Default Monkey Munch

    since some have asked, it is a snack that I make for my girls usually to send to school with their lunches or as a sweet treat. I think it goes by a few other names too.


    9 cups Chex cereal (any variety) I use President's choice organic wheat squares,or shreddies are good too.
    1 cup semisweet chocolate chips
    1/2 cup peanut butter (I use PC organics no sgar or salt pb, but any brand will do)
    1/4 cup butter
    1 teaspoon vanilla
    1 1/2 cups powdered sugar

    1. Into large bowl, measure cereal; set aside.
    2. In 1-quart microwavable bowl, stir together chocolate chips, peanut butter and butter. Microwave uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
    3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
    Stove-Top Directions: Into large bowl, measure cereal; set aside. In 1-quart saucepan, heat chocolate chips, peanut butter and butter over low heat, stirring frequently, until melted. Remove from heat; stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

    Delicious, and nice to know what is in their snacks, so many of the pre-packaged ones are full of artificial colour & flavour as well as preservatives & too much sodium.

    Sounds yummy. I'll have to let them make some this summer (with help). They can't take it to school though - no PB anything.

    We are allowed almonds/almond butter, but no pb. not all nuts are the same, tree nuts are different from peanuts. If you ask, almond butter or cashew butter may be acceptable

    I keep hearing about almond butter and butter made out of sunflower seeds, but I can't seem to find it around here. I guess I'll have to find some to order online, because my two do love PBJ sandwiches so I'm sure they'd enjoy almond/sun butter and jelly sandwiches at school.

    We carry it here in our health food stores or organic sections of the grocery stores. I love, LOVE cashew butter.

    If you have a Trader Joes they carry almond, cashew and sunflower butters.
