This is copied and pasted from a post from Molly from February. It took me forever to search for it, so I am pasting it here so I won't have to look for it when I make it this week.

for supper last night.
I keep seeing baked egg dish recipes for a simple elegant dinner and since it was really all I had in the house, I gave it a go.
(slightly modified cooks.com recipe)
I sauted 1 sweet onion, 1 garlic clove smashed, 2 pinches smoked paprika and 1 pinch cumin in olive oil and added in 1 drained can of diced tomatoes.
greased 6 ramekins and placed half pitas in the ramekins to form a shell/crust.
spooned in the tomato onion mixture in the cups.
Cracked an egg into each ramekin and sprinkled with sea salt and pepper.

placed the 6 ramekins in the oven on 350 for 15-20 minutes until the egg white filmed over but the yolks were still slightly soft.

I am putting this into a regular meal rotation. I always have these ingredients on hand.
