T's Carrot Cake
1/2 Cup oil
1 Cup brown sugar
2 eggs
1 1/2 Cups flour
1 tsp baking soda
1 tsp baking powder
1/8 tsp salt
1 tsp cinnamon
1/2 Cup milk 1 Cup finely grated carrots
Combine oil, sugar and eggs. Beat well. In another bowl combine dry ingredients (not carrots). Add dry ingredients, alternately with the milk to the egg mixyure. Stir in carrots. Bake at 350 in a 9 inch greased baking pan for 30 minutes or until a knife inserted in centre comes out clean. Ice with Cream Cheese Frostng.
T's Cream Cheese Frosting
4oz cream cheese
1/4 Cup butter
1 tsp pure vanilla extract
2 to 2 1/2 Cups icing sugar
Beat Cream cheese, butter and vanilla until smooth. Add icing to obtain desired consistency (fluffs up nicely using a stand mixer on 10)
This is enough to frost a 2 layer cake. Save leftovers in fridge to frost cinnamon buns

Theresa, I made this on Saturday and OMG it was so good and so easy!!!! My husband was raving about it.
One thing though. I thought it was a little dry because I think I cooked it too long. How long do you cook it for?

Mine is moist as heck. 30 min. Insert a knife, if it comes out clean it's done, if not, back in for 2 minute intervals until knife is clean.
I updated the recipe with the bake time.

I think I let mine go 45 minutes. Plus I cooked it on the grill. I cook everything on the grill, even made peach pie last year that was out of this world.
I'll do 30 next time, thanks!

I have to find it first. We have a peach tree hanging over our deck (see pic) and I always wanted to make peach pie with the peaches. I've been collecting recipes over the years. Last summer was the first time the squirrels didn't devour them so I was actually able to make a pie! It was so freaking good.
