This is the recipe Dweck was refering to as the Low carb recipe he used for Christmas. It's simple to use and can be made with regular sugar or splenda. I normally use splenda.
1 packet of Knox Geletine
1/2 cup splenda granular or sugar
1 cup water (hot or boiling)
16 oz cream cheese (softened) (I use fat free cream cheese)
1 tsp vanilla
1 graham cracker crust (I get a low carb or reduced fat one at Meijer)
1 can no sugar added cherry pie filling (or topping of your choice)

Beat the Cream Cheese with a mixer until smooth add vanilla. Mix Splenda or sugar with the knox in a seperate bowl then add the hot water to the mixture and stir until all the knox is disolved (may take a few minutes). Add the mixture to the cream cheese and mix until smooth. It will be pretty runny. Pour into the graham cracker crust and refrigerate for at least 3 hours. Then add the topping and either refrigerate until ready to use or serve.

I always make cherry as that's what my husband prefers but I think you could melt chocolate or caramel and swirl it in when it was partially set to make a swirl cheese cake or something too.

It's so easy to make and is always a big hit with the sugar watchers and non watchers in our family. Those who normally won't eat the sugar free stuff even like it.
