I'm doing roasted vegetables for a neighborhood pot luck Christmas Eve -- I know they are not hard to do, but does anyone have a really good, knock your socks off, recipe for roasted veggies? I have done them and they are good, but I'm looking for some ideas that would make them extra special. I usually slice them up, put them in a pan, drizzle olive oil, garlic, some italian herbs and roast for about 10-15 minutes at 450 -- woo hoo -- nothing special. Any ideas?
