I don't know about anyone else but I'm always looking for a good recipe for breakfast when I have to feed a crowd. I hate standing over the stove trying to cook for a lot of people and keep food hot so everyone can eat at the same time.
The cafe downstairs in my office building serves these baked eggs and I tried to make them this weekend. They turned out pretty well.
12 pieces thin sliced bacon. Pre-cook it in the microwave just a bit until its cooked but still pliable. I needed to cook it more to make it more crispy (or use thinner bacon, I don't know which)
12 eggs
Shredded cheddar cheese
Mrs. Dash or other seasoning of your choice
Pre-heat oven to 350 degrees
Take bacon and line one piece in each cup of a muffin pan. Once lined, crack an egg in each cup. Season the top of the egg as you please. The cafe uses Mrs. Dash. Top with shredded cheese. Bake at 350 until eggs are done. My oven took about 30 minutes. Remove from pan by running sharp knife around edges. They popped right out.
