    Default Potato Soup

    I posted this a couple years ago on my historic cooking forum, I had forgot about it because I'm not much of a soup eater unless I'm sick, was on a soft diet for about a month in the summer of 2005 and invented/tossed together this recipe. Nice thing was I had also lost some weight and needed to get built back up to have some surgery so this is not a low-fat diet recipe. Anyway a friend dug it up and made it last week and made a big deal about how good it was, so since it's soup weather I thought I'd pass it on.

    Potato Soup

    1 Vidal onion (chopped fine)
    6-7 red potates (diced fine)
    enough beef broth to cover

    Bring to a boil, simmer till potatoes and onions are tender and almost falling apart.
    Add 1/2 pound grated sharp cheddar cheese and a couple pinches of parsley and a pinch of dill weed plus a couple of grinds of black pepper.

    When cheese is well melted add a nice blob of real butter and a pint of Half and Half, bring to a slight boil and serve.

    Hey, that's how I make mine, except I never used beef broth Is that a Nebraska thing?

    I've seen other do it, I just needed nourishment and thought it would be a good addition since the Dr. told me to do a soft diet.

    It's also totally wicked if you puree it, and add more beef stock to make it less like mashed potatoes.

    Sounds good, but at the time I was wanting as solid as I could stand, had been on IV's only for over a week.

    I use Chicken Broth in mine. But if you have a Safeway around you their Beef Broth (own brand) is the best by far.
