This is SO good. I made it last night for dinner and my husband wants it for their Labor day lunch at work on Friday. It is somthing different from the regular potato salad, macaroni salad sides. I didn't think I would like it because it has lime juice in it but you don't even taste it.
1 pkg (16 ounces) elbow macaroni uncooked.
1 lb cherry tomatoes, quartered
1 cup frozen corn, thawed
1 medium green pepper, chopped
1 small red onion chopped
1 can (2-1/4 oz) sliced black olives, drained
1/2 cup lime juice
1/4 cup olive oil
1 TB red wine vinegar
1 TB chili powder
1 TB cumin
1 tsp sugar
1 tsp salt
1 tsp garlic powder
1. Cook pasta according to directions; drain & rinse in cold water. In a large bowl combine pasta, tomatoes,corn, green pepper, onions and olives.
2. In a jar or something with a tight fitting lid combine the lime juice, oil, vinegar and seasonings, shake well. Pour over pasta mixture, toss to coat. Cover and refidgerate for 1 hour or until chilled.
You can add some ceyenne pepper to taste if you like it HOT.

Absolutely, Katy. I served it with a chicken breast, marinated in the same sauce that I tossed the salad in (I made and extra batch.) I grilled the chicken and served it on a roll with mayo with a little salsa mixed in.Originally Posted by rorybaby
