    Default Crab Chowder

    (1) 10 oz. package frozen cauliflower
    2 cups milk
    2 tablespoons sliced green onion
    2 tablespoons diced pimento
    1/2 teaspoon salt
    1 cup light cream
    3 tablespoons all purpose flour
    (1) 71/2 oz can crab meat & juice
    (1) 3 oz package cream cheese (cut into cubes)
    salt & pepper to taste

    In 3 quart saucepan cook cauliflower according to package directions (do not drain) cut up any large pieces-stir in milk,green onion,pimento & salt. Heat & stir until blended.

    In seperate bowl, combine light cream & flour-add to hot mixture-cook & stir until thick & bubbly. Add crabmeat and juice & cubed cream cheese. Stir until cream cheese melts and is heated through. Season to taste with salt & pepper.

    This is probably the best crab soup I've had. The cook on the boat we were on in Alaska made this for us. For those that do not like cauliflower you do not even taste it I was quite surprised it was cauliflower based.
