One 5 lb pork shoulder (Boston butt) bone in or bone out, bone in helps keep it moister. (you'll also need wood chips for the smoking process)
The rub:
2 tbsp paprika
1 tbsp ground black pepper
1 tbsp turbinado sugar, or you can use brown sugar
1.5 tsp kosher salt
1.5 tsp garlic powder
1.5 tsp onion powder
1.5 tsp dry mustard
Mix together and reserve 2 tbsp of the rub mixture for the basting liquid.
The Basting Liquid
1/3 cup apple cider vinegar
1 tbsp brown sugar
1 tbsp Worcestershire sauce
1 cup water
2 tbsp of rub mixture
Combine all ingredients in pot, bring to boil and set aside.
BBQ Sauce
1 cup ketchup
3/4 cup cider vinegar
2 tbsps brown sugar
1 tbsp onion powder
2 tbsp Worcestershire sauce
2 tbsp prepared mustard
salt and pepper to taste, can also add 1/8 tsp ground red pepper too if desired.
Combine all ingredients, bring to boil and reserve for eating your pulled pork!!!!
Rub half of the Rub mixture onto the pork. Place pork in ziplock bag or a container, and allow to sit overnight.
Take pork out of fridge, let sit 30 minutes at room temperature, rub remaining rub mixture on pork.
While your pork is "resting" prepare your grill for indirect grilling, heating one side to medium-low heat and leaving one side with no heat. (can use gas or charcoal, whatever you prefer, but charcoal works best)
Add wood chunks to the grill to begin smoking.
Place pork on unheated grill side in aluminum pan. Close lid, cook for 4.5 hours, basting pork every hour with the vinegar/water/rub mixture. Add additional wood chunks and coal at this hour mark as well. (discard any remaining basting liquid when done bbqing)
Preheat oven to 250 degrees. Remove pork from grill, and wrap in several layers of aluminum foil and bake in oven for 2 hours. When done, allow to stand still wrapped for 1 hour, or until pork easily pulls apart.
