Really good Weight Watcher recipe - Warm Bean Salad
Weight Watchers Warm Bean Salad (it's delicious served cold, too)
4 tsp olive oil
4 Plum Tomatoes, chopped
1 Onion, minced
1/4 cup each diced green and red bell pepper
2 Tbsp fresh for (or 1 tsp dried) minced sage
1 garlic clove, minced
1/4 tsp salt
1/4 tsp freshly ground pepper
1 (16 oz) can cannellini (white kidney) beans, rinsed and drained
Heat the oil in a medium nonstick skillet. Add the tomatoes, onion, bell pepper, sage, garlic, salt & pepper; cook, stirring occasionally, until the sauce thickens, about 5 minutes. Take off the eat and stir in the beans.
