I swear, I never would have ever attempted this dip - unless I hadn't tried it myself. It's SO good, and everywhere I have brought it - people ask me for the recipe.
1 small onion chopped
1 small jar pimentos chopped; drained
1 (14 oz) jar black eyed peas; drained
1 (11oz) can of shoepeg corn; drained. (Frozen works fine, too)
1 avocado
Sauce:
3 Tbsp Tiger Sauce (Usually found by the ketchup, A-1 sauce, etc)
1/4 c white vinegar
1/4 c vegetable oil
1/3 cup sugar
Mix the onion, pimentos, peas, and corn. Whisk the sauce ingredients to dissolve the sugar. Pour sauce over the corn mixture. Cover and refrigerate for 8 hours or overnight.
Before serving, strain out all liquid into colander and then add chopped avocado.
Serve w/ the Tostitos scoops.

We LOVE Tiger Sauce......we use it as steak sauce. I'll have to try the dip recipe because we love avacados too![]()
Karina - it's a cayenne pepper based sauce, but it's got a lot of sweet taste, too. I used it on some grilled shrimp and it was incredible!Originally Posted by TangerineFizz

I couldn't find Tiger sauce, but bought Thai sweet chili sauce. Do you think this is comparable?
what is shoepeg corn ?
It'll say shoepeg on the can. I think it's the white corn. This was really tasty, even with the other sauce.
