This recipe is really delicious!! Doyle and I made it for lunch today, and it was really perfect. It has a ton of flavor, and defintely didn't taste like a diet meal!
4 tsp olive oil
4 plum tomatoes, chopped
1 onion, minced
1/4 c diced green bell pepper
1/4 c diced red bell pepper
2 tbsp fresh (or 1 tsp dried) minced sage
1 garlic clove, minced
1/4 tsp salt
1/4 tsp freshly ground pepper
1 (16 oz) can cannellini (white kidney) beans, rinsed and drained
Heat the oil in a medium nonstick skillet. Add the tomatoes, onion, bell pepper, sage, garlic, salt, and pepper; cook, stirring occasionally, until the sauce thickens, about 5 minutes. Take off the heat and stir in the beans.
Makes 4 servings, 2 Weight Watcher's points per serving.
