These are the strangest sounding cookies but they are delicious!
Premium saltine crackers
1 cup butter (two sticks)
1 cup firmly-packed light brown sugar
12 ounce package semi-sweet chocolate chips
1 cup chopped walnuts or pecans
Cover a jelly-roll pan (cookie sheet with 1" sides) with foil. Place saltines in rows over sheet to cover completely.
Put the two sticks of butter and cup of brown sugar in a small pot, bring to a boil, and boil gently two to three minutes without stirring. Pour mixture over saltines, spreading to cover completely.
Place in 400° oven for seven minutes. Remove from oven and immediately sprinkle chocolate chips over crackers. Wait about five minutes and then spread melted chips to cover crackers completely. Sprinkle with nuts (I found that putting the tray back in the oven for a minute, then pressing the nuts onto the chocolate, kept them from falling off later).
Let cool thoroughly, then break into pieces. Tastes sort of like a Heath bar cookie and you would NEVER believe the base is saltine crackers!

Yes! I love this! I also add in brick o brackle (heath chips). These were a huge hit at Christmas. I hate peeling the foil off at the end, though. I even tried parchment paper instead and it wasn't any easier.

We don't use the foil, we just butter the pan well and then lay the crackers down. Try that, it is not hard to get them out when they are finished. ;D
