    Default Buffalo Chicken Dip

    This is always a big hit. You can make it as hot or as mild as desired depending on the preference. I've seen many variations of this recipe and this is my fave (so far).

    4 boneless, skinless chicken breast halves, cooked (boiled or your preferred method) and forked to shred
    2 (8 ounce) packages cream cheese, softened
    1 small bottle chunky blue cheese dressing*
    1 cup (or more/less as desired) Buffalo sauce, (we prefer Hooter's brand)
    1 1/2 cups shredded Cheddar cheese

    1 bunch celery, cleaned and cut into sticks to use as dippers
    Tortilla chips


    Cook chicken as desired. Shred with two forks. Place into shallow 2 quart casserole and add hot sauce. Stir until mixed. Meanwhile, heat cream cheese and blue cheese dressing in sauce pot over medium heat. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and spread over chicken mixture. Sprinkle the remaining cheese over the top and bake at 350 F until hot and bubbly, about 20 minutes. Serve with celery sticks and/or chips or your favorite dipping cracker.

    * this is also very good with Ranch dressing for those who don't like blue cheese.

    ** Buying one of those roasted chickens from the market and shredding that is just as good and easy if you don't want to cook your own. Just use the whole chicken since you will only have two breasts (ha!).

    I love this recipe! It's always a big hit at parties. I've normally used canned chicken--the ultimate lazy!
