This cooks at 350

1 cup golden raisins
1 cup dried cherries
1 cup dried blueberries
1 cup dried apricots (I use my kichen shears to chop to the correct size)
1/2 cup dried pineapple if desired.

(you can in fact use any type of dried fruit you like currents, cranberries etc. I find the above are the most popular) Just adj the amounts so you don't exceed 5 cups of fruit.

Zest of one lemon and orange

1 cup rum and 1 cup sugar or if you don't want to use alcohol use 1 cup grape juice and 1/2 cup sugar. My boss used apple juice and said it came out good also. The grape juice will turn your cake a bit purple.

1 1/2 cups butter
1 1/4 cups apple cider or juice
1/2 tsp ground gloves
1/2 tsp allspice
1 1/2 tsp ground cinnamon
1 tsp ground ginger

2 cups all purpose flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
3 eggs
1 cup coconut if desired
1 cup toasted pecans or walnuts chopped course
Brandy for basting and or spritzing

Combine dried fruits and zests. Add rum or grape juice and soak overnight or if you are in a hurry microwave on 50% power for 10 minutes. The point is to rehydrate the fruit.

Put fruit and remaining soaking liquid in a pan add the sugar, butter, apple juice and spices. Over med high heat bring to a boil stir often then reduce heat and simmer for 5 to 10 minutes. Remove from heat and cool for at least 1/2 hour.

Combine dry ingredients and sift them into fruit mixture mix by hand do not use a mixer. Do not over mix. Add eggs one at a time. Add nuts and coconut. Spoon into a large non-stick loaf pan and bake for 50 minutes. Check for doneness by inserting toothpick into the middle of the cake. If it comes out clean then it's done. If not bake another 10 minutes, and check again. I find mine usually take about 1 hour 20 minutes but start at 50 minutes nothing is worse than dried out fruit cake.

Cool on rack and baste or spritz with brandy if desired. allow to cool completely before turning out from pan. Store cake in an air tight container you can spray with brandy every couple of days if desired.
