My dad loves chocolate chip cookies but they are a no no now that he is on dialysis. His next favorite cookie is peanut butter cookies. I'd like to make him some but have never found a really good recipe.

Here's the one I use.
1/2 cup butter or margarine
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup peanut butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups flour
1/2 teaspoon vanilla
Cream first three ingredients, add egg, salt, soda, then gradually add flour.
Roll into balls and press with fork. Bake 350 for 10-12 minutes.
Really simple - really good!

1 cup sugar
1 egg
Mix and bake as regular cookies (approx 350 for 8 - 10 minutes) - simple simple simple!

I was going to say it's the same recipe I use, but I use the cheapest PB I can find, the store brand with a layer of oil on the top. Stir it well before adding to the rest of the ingredients. It makes a wonderful flavor difference!

This is the recipe I use, but I had Reese's Peanut Butter Chips to them. I sometimes have trouble locating them, but man oh man do they pump up the peanut butteriness of the cookies. Also, it helps keep them softer since you can't press the fork marks into them.Originally Posted by BucksMom
