This is one of my all time favorite recipes. My grandmother makes it for me every Thanksgiving and Christmas holiday. This makes a really nice firm casserole and it tastes SO good.
Breakfast Casserole
1 lb. sausage
6 eggs
2 cups milk
2 cups grated cheddar cheese
1.5 tsp. dry mustard
6 slices white loaf bread (I used wheat, doesn't seem to make much of a difference)
8 oz. sliced fresh mushrooms (optional if you don't like them)
(Can also add onions, peppers, to your taste)
Cook and crumble sausage until done, drain, set aside. Beat eggs until creamy, add mustard, salt and pepper. Crumble bread into egg mixture, and add milk. Add cheese and sausage. Pour into greased 9x13 baking dish and top with mushrooms. Best if made the night before and allowed to sit in fridge. The next day, cook at 350 degrees for 35-45 minutes until firm.

We have breakfast casserole every Christmas morning...except we use hash brown patties on the bottom instead of bread.

I know this topic is kinda old but I wanted to reply. Sorry if it annoys anyone.
Anyways lol this is our christmas breakfast tradition every year as well. I got the recipe many years ago from my aunt. The only differences are instead of bread I use crutons and line the bottom of the pan with them then put the cheese, mushrooms, and sausage on top. My recipe calls from the dry mustard but I pass on that option. I also add a can of cream of mushroom soup to the eggs and milk and blend all that before pouring it over the crutons, mushrooms, and sausage. And it is usually built the night before and left to soak so the crutons really soak up all the egg. I then bake it at 300 for two hours.
Like I said im sorry but bumping the topic but I didn't want to make a whole new post. I was just excited and surprised to see that this recipe is popular. And even more cool is that it is a christmas morning tradition for others as well.

No problems bumping up a good recipe!
I make this dish, with a few tweaks. I mix the eggs and milk together and add some dill instead of the dry mustard. I break the bread into small pieces (or you can cut it into cubes, and any kind of bread will do) and toss it with the cheese and sausage. Then pour egg and milk mixture over it, toss well, put in 9x12 pan, sprinkle with mushrooms (I cheat and use canned), cover, and refrigerate over night. Bake covered at 350° for the first 30 minutes, then uncover and bake about another 15 - 20 minutes.
