1 3/4 cups all purpose flour
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 TBS sugar
2 tsp baking powder
1/2 tsp salt
1 3/4 cups milk
3 eggs separated
6 TBS (3/4 stick) unsalted butter melted and cooled
Pinch of cream of tartar
1/2 cup finely chopped pecans, lightly toasted
1 cup pure maple syrup

Preheat waffle maker. Sift together flour, nutmeg, cinnamon, sugar, baking powder and salt. Whish milk, eggs yolks and melted butter. Beat egg whites and cream of tartar to stiff peaks. Stir milk mixture into dry ingredients until smooth; stir in pecans. Gently fold in egg whites until blended. Servies 4-6
