1 1/2 cups all purpose flour
1 tsp salt
1/2 tsp baking soda
1 egg
1/2 cup plus 1 TBS granulated sugar
2 TBS butter, softened
2 TBS shortening
1/2 cup half and half
1/2 cup milk
1/4 cup buttermilk
1/4 tsp vanilla
Combine flour, sale and baking soda.
Lightly beat egg ... add sugar, butter and shortening and mix well with mixer. Add half and half, milk, buttermilk and vanilla. Mix well.
Add dry flour mixture to wet mixture and mix until smooth.
Cover and chill overnight (you can use immediately, but an overnight chill makes it better)
Prepare waffle iron however you use yours; prefer a light coating of veg oil. Leave batter out of fridge to warm a bit.
Spoon apprx 1/2 cup of batter onto waffle iron and cook 3-4 minutes or until light brown.
Makes about 6 waffles.
