Take several large potatoes and slice almost all the way through, about 1/2" apart.
Slice a couple of large Vidalias about 1/4" to 1/2" thick.
Place the potatoes on individual squares of foil. Put a slice of onion in each cut in the potatoes. Add butter (I put a thin pat in each cut) or margarine and season to taste (I just use sea salt and freshly ground pepper). Wrap each potato in its foil and bake until tender, 30 to 40 minutes. Can also be done on a grill or in a campfire, but use extra foil and turn often. Make sure the foil is well-sealed so the butter doesn't leak out.
