Pikelets
1 egg
1/4 cup of sugar
3/4 cup of milk (approx)
1 cup of flour
1 teaspoon of baking powder
1/4 tsp salt
1 oz butter
Beat the egg and sugar until thick and add milk with the sifted flour, and other ingredients. Mix until lsmooth.
You can add mashed banana or sultanas. It doesn't matter if the batter is a bit thin. Some people leave the batter to sit for half an hour.
Cook in spoonfuls on a hot greased frypan or gridle.
Again yummy with jam and cream.
In N.Z. the first thing kids make when they learn to cook is pikelets.

This is the recipe I use and they always turn out great.
1 cup SR flour
pinch salt
1/2 tsp bicarb of soda
2 tblsp castor sugar
1 egg
1/2 - 3/4 cup milk with 1 tsp malt vinegar added
2 tsp melted butter
Sift flour, salt and soda. Make a well in the centre, add sugar, egg, milk and butter and stir to make a smooth batter.
Put tablespoons onto a hot greased griddle. Cook until bubbly on top and brown underneath. Turn to brown other side.
