    Default Any quick recipes for codfish cakes from Potato Buds & cod fillets?

    Growing up in Vermont, Mom used to fry codfish cakes, which I loved.

    Several times I've tried thawing a cod fillet, putting it through a blender, adding raw egg, instant potato flakes, and then frying -- and while it's edible, it doesn't taste the same.

    Anyone have any good recipes?

    I can get my Dad's, he make the best cod cakes. =)
    Definitely no blender used.

    got this from allrecipes.com, I get so many good recipes from there.

    Ingredients

    2 large potatoes, peeled and halved
    1 pound cod fillets, cubed
    1 tablespoon butter
    1 tablespoon grated onion
    1 tablespoon chopped fresh parsley
    1 egg
    3 tablespoons oil for frying

    Directions

    Place the potatoes in a large pot of water, bring the water to a boil. Let the potatoes cook until they are almost tender.
    Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl.
    Add butter, onion, parsley, and egg to the bowl; mash the mixture together. Mold the mixture into patties.
    Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.

    I would keep the fillets whole, dip them in the egg and then the potato buds and cook them that way.

    I tried a variation of the allrecipe.com in that I cooked the potato buds and cod first then let then cool, then macerated the cod into small flakes, then added some diced onion and parsley to the mix before frying.

    That cooking first then cooling plus the diced O & P seemed to bring the resulting fried cakes much, much closer to what I remembered.
