12 ounces chocolate chips
12 ounces white chocolate chips
2 teaspoons cooking oil
1 1/2 teaspoons Peppermint extract/oil
about 20 or 30 red/white pepper mint candy smashed into bits
Line 9 inch square an with foil (I prefer the no stick)
melt chocolate chips and 1 teaspoon oil either in the top of a double boiler or in the microwave
**to microwave put chips in dry bowl and microwave on high 30 seconds..stir..microve 15 more seconds stir...repeat this until all chips are melted. Remember in the microwave if you don't stir chips will look whole but are melted and will burn. I use a wooden or plastic spoon so I can just leave it in the bowl. It takes about 90 to 120 seconds in my oven***
stir in 1/2 teaspoon of peppermint extract
pour onto cookie sheet spread to about 1/4 inch thick
Put into freezer let chill 10 to 15 minutes until hard
melt white chocolate chips and stir in 1 teaspoon peppermint extract
let cool about 2 minutes and spread over chocolate layer
top with crushed candies pushing them into the white chocolate a little so they stick well
Let cool completely then remove candy from foil and break into pieces.

I tried to make a similar recipe last year and the white chocolate separated from the dark when I broke it apart. Any hints on how to keep this from happening?

I am going to guess you let the bottom layer set up too long and / or the white chocolate had cooled down slightly. Maybe a little of both. Only a guess. I have never had that happen before.

I made this last night, I thought abouto doubling the recipe but since I had never made it I thought I should only make 1. Well I should have made 2 because it came out great!
I didn't use a 9 inch pan though, I just used a foil lined cookie sheet.
