Default Any good crock pot potato recipes?

I volunteered to bring a potato dish for the Christmas party at the doggie school. Since I will be at work (dog school) for about 4-5 hours before the party starts, I want to do a crock pot dish that can cook while I am there. Several of the people there are complete health nuts, and the others (me included) do not mind decandence (sp?..i.e. bacon, half and half etc). The owner can not stand even the scent of onions....I am not sure I know how to cook without onions...but I have to try!!!

    Any good suggestions? TIA

What other foods will be there- are you talking about an appetizer or a side dish to go with something else? How about a potato soup? I love my "Fix it and Forget It" recipe book for crock pot cooking! In fact I have a pot of navy beans and ham cooking right now

More of a side dish, potatoes au gratin or something like that?

I have 3 recipes that I use from the cooking lightly - version of fix it and forget it, all are pretty easy- a saucy scalloped potato, cheesy scalloped potato and one we really like called Garlicky potatoes, but this one has onions so probably wont work. I'm with you how do you cook with out using onions! I have plenty of other ideas, but they probably wont fit under the context of " healthy" : ) Oh and if you like Hot german potato salad I have a good recipe for that also.

I say forget the healthy aspect. Bring something you like! It's a holiday party, everyone can afford one night of splurging or they can politely decline anything that looks delicious. I'd bring scalloped potatoes or twice baked potatoes.

It's Christmas, for pete's sake. Let the "health nuts" simply take a small portion if they find the dish too rich. Make what is convenient for you and will appeal to most. I say a scalloped potato or gratin.
