    I have one recipe that involves brining it overnight but wondered if anyone else had a good recipe that they've tried.

    Oh yes!! I am not at home right now so I will post it later. It calls for Sauterne Wine. It is a very easy recipe and had my dad and SU wanting to lick the pan LOL!!!

    Baahahaa samson.
    Sorry I COMPLETELY spaced this off!!!!!
    Roast Phesant with wine:
    1 pheasant quartered
    1-1/2 tsp. paprika
    1/4 c. flour
    1/2 tsp. salt
    1/8 tsp pepper
    2 T. olive oil
    3 oz. can of mushrooms (undrained)
    1/2 cup sauterne
    1/4 sliced onions
    Combine flour, paprika, salt and pepper. Roll pheasant pieces in mixture. Brown on all sides in olive oil. Add mushrooms and liquid, sauterne and onions. Cover and simmer about 1 hour or until tender. Makes 2-3 servings.

    I fixed this years ago and it was great. Now.....I think I would use fresh shrooms and change it around a bit.

    Let me know if you want some more recipes for pheasant.......I could scan a few and send them to you. There are some pretty yummy sounding ones in this book. Pheasant is something Steve does not hunt anymore
