Ingredients for dough:
- 1 package of active dry yeast
- 4 1/4 cups of all purpose flour, plus extra for dusting
- 2 Tbsp unsalted butter, softened
- 2 Tbsp sugar
- 1 Tbsp fine salt
- 1 1/2 C warm water (temperature should be no warmer than 110 degrees farenheit)
Ingredients for topping:
- 3 Tbsp unsalted butter, melted
- 1/2 Tsp kosher salt
- 1/8 to 1/4 Tsp garlic powder
- pinch of dried oregano
Place 1/4 c warm water in the bowl of mixer, sprinkle in yeast & set aside until foamy, approximately 5 minutes. Add flour, butter, sugar, fine salt & remaining 1 1/4 C warm water. Mix with dough hook until a slightly stick dough forms, about 5 minutes.
Knead dough by hand on a floured surface until very smooth and soft, 3 minutes. Roll into a 24 inch log & cut into 16 1 1/2 inch pieces. Knead each piece slightly & shape into a 7 inch long breadstick. Arrange breadsticks 2 inches apart on a parchment lined baking sheet. Cover with a cloth & let rise in a warm spot until almost doubled, about 45minutes.
Make topping by combining 1/4 tsp of salt with garlic powder & oregano.
Preheat oven to 400 degrees.
Brush breadsticks with 1/2 the melted butter & sprinkle with 1/4 tsp kosher salt. Bake for 15 minutes, until lightly golden. (Note tops will not get very brown).
When finished baking, brush with remaining melted butter & sprinkle with flavored salt.
