    I'm looking for a good broccoli cheese soup recipe, this one looks pretty good. What is processed cheese though, like Velveeta?

    Sauerkraut Soup
    3 T butter
    1 # smoked sausage (Kielbasa)
    1 chopped onion)
    1/3 C flour
    1/2 t thyme
    1 T parsley
    1/2 t black pepper
    2 C chicken broth
    1 C milk
    1 C half-and-half
    1 jar sauerkraut, with juice
    4 ounces cheese, shredded
    Melt butter.
    Chop the sausage coarsely - add to butter with onion
    Saute over medium heat until lightly browned
    Combine the flour, thyme, parsley and pepper, add to the sausage and brown ogether until bubbly
    Add the chicken broth, milk and the half-and-half,(can and do use all milk here), stir til thick
    Add sauerkraut and bring to a boil
    Reduce heat and add cheese, stir until melted.

    Paula Deen's potato soup:

    • 1/2 stick butter (doesn't every Paula Deen recipe start with butter?)
    • 1 small onion, diced
    • 2 medium carrots, diced about the same size as the onion
    • 2 tablespoons all-purpose flour
    • 8 medium russet potatoes, peeled and cubed
    • 4 cups milk
    • 2 chicken or vegetable bouillon cubes, dissolved in 1/2 cup hot milk
    • 1 cup half-and-half
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 2 cups salted water
    • Crumbled bacon bits, for garnish
    • Grated sharp cheddar, for garnish
    In a 4-quart saucepan, melt the butter and saute the onion and carrots until both are slightly tender, about 5 minutes. Whisk in the flour and cook for 1 minute. Add the potatoes, milk, and dissolved bouillon cubes. Cook over medium heat for 15 minutes, until the potatoes are very soft and some of them have begun to dissolve into mush. Add the half-and-half, salt, and pepper.

    Paula adds cooked shrimp at this point. I never have. I love this recipe without the shrimp. I have made it with and without the half and half, it is good either way. Very rich with the half and half, though.

    Cabbage Soup
    1 lb. ground beef
    1/2 teaspoon garlic salt
    1/4 teaspoon garlic powder
    1/4 teaspoon pepper
    2 stalks celery, chopped
    1 can kidney beans
    1/2 a med. head cabbage (chop into small pieces)
    1 (28oz) can crushed tomatoes
    1 tomato can of water
    4 beef bouillon cubes
    Brown the ground beef with garlic salt, powder and pepper, drain. Add remaining ingredients. Simmer 1 to 1 1/2 hours.

    Delish Carrot & Squash Curry Soup

    Carrot and Squash Curry Soup | The Pioneer Woman Cooks | Ree Drummond


    Ingredients
    3 Tablespoons Olive Oil
    5 cloves Garlic, Minced
    1 whole Large Onion, Diced
    3 whole Carrots, Washed And Sliced Thin
    4 whole Yellow Squash (sliced)
    Salt To Taste
    1 Tablespoon Curry Powder (more To Taste!)
    ½ cups Dry White Wine (optional)
    48 ounces, fluid Chicken Broth
    Heavy Cream (optional)
    Preparation Instructions
    Heat olive oil in a heavy pot over medium heat. Add garlic and onions and stir to coat. Add carrots and cook for 3 minutes, or until they start to get soft. Sprinkle in a little salt.
    Add squash. Stir and cook for a few minutes, until squash is soft and tender. After a few minutes, add salt to taste and the curry powder.
    Pour in wine if using. Let evaporate for about 30 seconds, then pour in chicken broth. Reduce heat to a simmer, cover pot, and cook for 1 hour.
    After 1 hour, taste and adjust seasonings. Turn off heat.
    Puree soup using an immersion blender, or in batches in a regular blender. Return to soup pot and bring to a simmer. Serve hot. If you’re feeling naughty, drizzle heavy cream over the top.

    Mine is similar, just no processed (yep, that is Velveeta) cheese in it.

    BROCCOLI & CHEDDAR SOUP

    INGREDIENTS
    ½ cup chopped onion
    ½ cup unsalted butter
    ½ cup all-purpose flour
    Salt and pepper to taste
    1 can chicken broth
    1 cup Milk
    ½ cup whipping cream
    1 10 oz box frozen broccoli, thawed (I use fresh, chopped to a size I like)
    2 cups shredded cheddar cheese

    METHOD
    1. In a saucepan, sauté the onion in butter until tender. Stir in the flour, salt and pepper. Cook and stir until smooth and bubbly.
    2. Mix the broth and milk together. Add this to the onion mixture. Cook and stir until the mixture boils and thickens.
    3. Add the broccoli and cream. Simmer, stirring constantly, until heated through.
    4. Remove from the heat and stir in cheese until it has melted. Serve immediately
