This is a great side for a baked ham dinner. It's also good by itself, or as dessert, or with ice cream...if you actually have any left over. As you can probably tell, I love this. there are several versions of this recipe online, but this is our fave.
Pineapple Stuffing serves 6
Can be prepped ahead and thrown into oven whenever. It's good warm, room temp or cold.
1/2 cup butter softened
1 cup sugar
4 eggs
1 1 lb. 4 oz can crushed pineapple drained well
6 slices white bread torn/cut into cubes
Cream butter and sugar together in large bowl. Beat in eggs one at a time until blended. Add drained pineapple. Fold in bread cubes.
Pour into buttered 1 1/2 qt baking dish.
Bake at 325 for about 1 hour until top is golden brown.
Can be doubled.
