Crust
3/4 cup Butter
3/4 cup Packed Brown Sugar
1 Egg Yolk
1 1/2 cups flour
1/4 tsp salt
Topping
1 300ml can Sweetened Condensed Milk
2 Tbsp strong black coffee (I make espresso)
2 Tbsp butter
6 squares Bakers Semi-Sweet Chocolate, chopped (you can substitute chips, if you wish)
6 squares Bakers White Chocolate, chopped
1 100g pkg Pecan Pieces, toasted
~For crust, beat butter and sugar in mixer (or large bowl) until smooth. Beat in egg yolk. Stir in flour and salt until well blended.
~Press into the bottom of a greased 13x9 pan (I find glass the easiest). bake at 350 for 20 min or until golden brown. Cool slightly.
~For topping, in a large microwave bowl,blend condensed milk, coffee, and butter. Microwave on high 4-5 min, stirring occasionally, until thickened a bit and smooth. Spread evenly over crust.
~Bake 12-15 minutes until set. Sprinkle surface with chopped chocolate. let stand for 1-2 min, or pop back into the oven for a second to help speed melting. Using a knife or toothpick, swirl the chocolates t make a pattern. Sprinkle with toasted pecans. I press the pecans lightly into the chocolate so they don't all fall off when cooled.
