Mmmm, you must be psychic. I got 2 butternut squashes in my CSA box and was wondering what to do with them. Soup, muffins, and now maybe this!

We've had an abundance of them too! I also like Thomas Keller's butternut squash soup if you're looking for a recipe - Nathan posted it here a few years agoLike all soups that I love it involves lots of creme fraiche.

Jess that's a great recipe! I didn't use the oven...just did it on the stove (had a pork tenderloin in there) and it still turned out wonderful. We served with Chardonnay and it went over very well!![]()
