    Another of our favorite fall recipes! From Cooking Light October 2004



    I don't add the pine nuts, cut the amount of cheese in half, and don't drain all the bacon drippings

    Mmmm, you must be psychic. I got 2 butternut squashes in my CSA box and was wondering what to do with them. Soup, muffins, and now maybe this!

    We've had an abundance of them too! I also like Thomas Keller's butternut squash soup if you're looking for a recipe - Nathan posted it here a few years ago Like all soups that I love it involves lots of creme fraiche.

    Butternut squash is delicious roasted. I just chunk it up, toss with a little bit of olive oil and seasonings, and roast until tender.

    Jess that's a great recipe! I didn't use the oven...just did it on the stove (had a pork tenderloin in there) and it still turned out wonderful. We served with Chardonnay and it went over very well!
