    Default Honey Pecan Cranberry Chicken

    This is a really wonderful recipe I made up tonight.

    Ingredients:

    4 chicken breasts (I used boneless/skinless chicken breasts)
    2 tablespoons light mayonaisse
    bread crumbs
    1/2 cup honey
    1/2 cup butter or butter substitute (I used Country Crock)
    1 cup chopped pecans
    1/4 cup craisins (you can use more if you like)

    Rub the chicken breasts with the mayonaisse. Coat with bread crumbs.

    Place chicken in a covered dish.
    Bake at 325 degrees for 1 hour.

    While the chicken is baking, chop your pecans. Mix your butter and honey until well blended. Add the pecans and the craisins to the butter/honey mixture. Set aside.

    When there is about 15 minutes of baking time left, remove the chicken from the oven, and drain most of the liquid from the pan. (leave a little bit to stop it from sticking to the bottom). Spread the honey/butter/pecan/craisin mixture over the chicken breasts and return to the oven UNCOVERED for the last 15 or 20 minutes.

    Serve with a salad or your favorite veggie.

    OK, i have to ask, what is a craisin?? I am in the uk and have never heard of it, is it a dried cranberry??
    Also, could i leave out the pecans? Hubby and daughter have nut alergies - i looooove all nuts but cant risk having them :-(

    yes, craisin is a dried cranberry.

    Well, if you leave off the nuts, it really isn't pecan cranberry chicken anymore But of course you can leave them off.
